I know I need to eat more veggies, but I just can’t get inspired to do it! A simple side of veggies just bums me out, and one can only eat so many salads. Do you have any suggestions?

Blend Your Veggies

One of the sneakiest techniques is to blend veggies into your foods so that you don’t even know they’re there. Blending cucumber, spinach, or other leafy greens into shakes & smoothies is super easy. (This travel blender is smoothie ready.) And I’m all about pureed veggie soups…



Air-Fry Veggie Bites & Fries

It’s a fact: Veggies are more appealing when cooked in the air fryer. It’s less fussy than oven roasting, and the air fryer heats up faster. A fool-proof trick is to toss your veggies in olive oil, season them with a premixed seasoning blend, then air fry! These finger-food-style recipes are great anytime, even for snacking.



Swap Noodles & Rice for Veggies

Rice and pasta are staples in our diets because they’re great bases. Swap them out for (or super-size ‘em with) spiralized veggies, cauliflower rice, and other options! Modify Decadent Dishes

One of the best ways to eat veggies? Make them taste like your favorite indulgent foods! Cheeseburgers, pizzas, nachos—integrate veggies into healthy versions of the foods you love and eating them won’t feel like a chore at all.



Beef Up Meaty Dishes with Mushrooms

Chopped mushrooms + ground meat = bigger portions for very few additional calories, plus more plant-based food in your meal! (Yes, mushrooms are technically fungi and not vegetables, but I think they count here.) I also sometimes fully use mushrooms in place of meat.
