Ways to Enjoy It…
On a bed of greens: Fill a bowl with your favorite lettuce (plus any other salad veggies you have on hand), and scoop the chicken salad on top.In a pita, wrap, or sandwich: Stuff the salad into whichever whole-wheat, high-fiber, or other carb situation you keep on hand. Great on its own or with creative additions!
In lettuce cups: Have a head of iceberg or butter lettuce? Pull off a few leaves and fill 'em with chicken salad. YUM.
In egg whites: Yes, we love spooning scoopable salads like this into hard-boiled egg whites, and this one would make a tasty & protein-packed snack.
