Cauliflower
The cruciferous white veggie gained popularity in recent years, but we predict it'll really go mainstream in 2016. This year, we fell in love with a Southern California company's cauliflower-based sandwich thins and pizza crust, and we fully expect big brands to jump onboard with similar products. People are finally getting the memo: Just because something is natural or organic doesn't mean it's healthy. And recent studies suggest refined sugars are even worse than we thought. More and more people are cutting out meat or cutting back on their meat consumption, which is leading to a boom in plant proteins.
