![]() Canned Goodies - Peas are a necessity for my no-guilt guacamole, and canned beans (black beans, fat-free refried beans, etc.) are delicious -- both as a side dish and as an ingredient in so many of my favorite Mexican creations! See the recipes linked to below for proof... Cheeses - Stick to fat-free shredded cheddar, or go for 2% Mexican-style blends. Kraft and Sargento make my favorites. And The Laughing Cow Light cheese wedges add the perfect creamy texture to all sorts of cheesy, Mexican concoctions! Veggies, Spices & More - Pre-shredded lettuce will save you some time in the kitchen. Other staples include tomatoes, onions, and peppers. You can spice up just about anything with taco seasoning packets, cumin, and chili powder. And let's not forget about herby cilantro -- perfect for topping off any Mexican meal! Sauces, Dips, Etc. - Fat-free plain Greek yogurt is a fantastic swap for fatty sour cream (although fat-free sour cream is good too), and it also works great in so many dips (including my guac). Fage Total 0% is the best! Salsa is great (and SO LOW in calories). I like fresh salsa as well as the jarred kinds made by La Victoria and Pace, and I really like black bean and corn salsa. And of course, grab some taco sauce! Margarita Must-Haves - It's all about the sugar-free lemonade mix (Crystal Light), diet lemon-lime soda (Sprite Zero), and lime juice (fresh or bottled). And don't forget the tequila... 80 proof!
